Whats up Diabeast family! this recipe was inspired by my Coconut Curry Chickpea's. I have worked with this recipe until I perfected it! talk about 30 min recipes. Not only does this dish taste amazing! but it will save you a lot of money at the store, and you can feed your whole family with this dish.
1 head of Cauliflower, cut into florets
1 Green bell Pepper, diced
1 Red bell Pepper, diced
1 bush of cilantro, chopped
1 Yellow Onion, diced
3 Cloves of Garlic, minced
1 Table spoon of chili flakes (Optional)
2 Tablespoons of Curry powder
1 Tablespoon of Masala powder
1 Tablespoon of Turmeric powder
2 Tablespoons of Paprika powder
2 Tablespoons of Onion Powder
1-2 Tablespoons of Himalayan Sea Salt
1 Tablespoon of Pepper
1 Can of Coconut Milk
1 Can of Tomato Sauce
In a large pan or pot, heat some oil over medium-high heat.
Add the onion, garlic, and bell peppers to the pan and sauté for about 5 minutes until the vegetables are slightly softened.
Add the cauliflower to the pan and sauté for an additional 5 minutes.
Sprinkle the chili flakes, curry powder, masala powder, turmeric powder, paprika powder, onion powder, salt, and pepper over the vegetables and stir to coat the vegetables evenly.
Pour in the coconut milk and tomato sauce and stir to combine.
Bring the mixture to a boil, then reduce the heat to medium-low and let it simmer for 15-20 minutes or until the cauliflower is tender.
Stir in the chopped cilantro and let it cook for an additional 2 minutes.
Taste and adjust the seasoning if necessary.
Serve the curry over rice or with naan bread.
